We serve breakfast and lunch, put together with only the best quality ingredients: * Whole Grain Breads and Crackers * Broccoli, Asparagus, Sugar Snap Peas, Squash, and Spinach, beside the usual Corn, Carrots and Green Beans.
* Brown Rice almost everyday, sometimes twice a day * Fresh Fruit, some will even eat the skin on kiwi *100% Juice * Organic Milk, and last, but not least, Sea Salt in a grinder which they deftly hold in both hands.
Our students learn to set the table, use a knife to cut and spread, practice table manners and polite conversation. Many started off the year standing beside the table pointing at the food and crying, " What is that? My mommy doesn't eat that. What are those little specks on the bread? We don't have that at our house." But we persisted.
We explained the many benefits of eating these new foods and even offered a miniature marshmallow for trying one bite. We turned it into a game and before long they came into the kitchen looking eagerly around and asking, "What are we having today?" They will quickly eat up a bowl full of broccoli and beg for more. Most eat two or three bowls. They tend to grab for asparagus with both hands causing us to remind them of their manners. We noticed a marked improvement in their behavior and learning when they started asking for more of our "special" food.
